Why do most cars with an engine(usually up to V6-V8) will say 160MPH on the speedometer, yet most cant?

I went to a motorcycle dealership and asked why the bike maxed out at 200MPH if thats so dangerous, and the guy said "because it only reaches 140MPH" and that it's the same for cars.
